Day 43 — I used my crockpot today and dinner was ready when I walked in the door.  No better feeling than that!

    I love my slow cooker . . . it’s such a nice treat to be wondering about WHAT to make for dinner and walk in and find out that dinner is READY.

    My slow cooker is my life-saver some days. But it does take a bit of thinking ahead — which I most often don’t have time for these days. My favorite in a pinch recipe? Frozen roast (3-4 lbs, cheap cut) can of tomato soup, splash of red wine, fresh ground pepper. Cook on low for 8 – 10 hours. Voila! Serve with egg noodles and green salad.

      I used to do something similar . . . one pound of boneless chicken and one jar of spaghetti sauce.

      Serve with spaghetti noodles and parmeson. Or put chicken under the broiler with some mozzarella and then serve over noodles.
